Ole! If you've never tried black beans, this Smoky Pork and Black Bean Quesadilla is the dish to try some. The barbecue sauce infused with the beans, pork and melted cheddar cheese makes this a Mexican treat to try on Cinco de Mayo or any day. Ole!


1 Dempster's Ancient Grains tortilla
1/2 cooked pork chop, cubed
1/4 cup cooked black beans
3 tbsp red onion, diced finely
1/4 cup cheddar cheese, shredded
4 tbsp BBQ sauce


In a bowl, mix pork, beans and BBQ sauce together. In a frying pan, place the tortilla in the pan on medium high. Place the cheese on only one half of the tortilla. Add BBQ pork bean mixture on top, followed by the red onions. Fold the tortilla in half, and cook on medium high covered for about 2-3 minutes. Carefully, flip the quesadilla over to cook on the other side for about 2 minutes until the cheese has melted and the bottom is browned. Cut into quarters and serve hot,.
