Lean and tasty chicken tacos made with tender pieces of chicken breast and seasoned with homemade taco seasoning.
|1 tbsp||(15 mL) Smoked paprika|
|2 tsp||(10 mL) Cumin|
|2 tsp||(10 mL) Chili powder|
|1 tsp||(5 mL) Oregano|
|.5 tsp||(2 mL) Coriander|
|.25 tsp||(1 mL) Cayenne|
|Salt and pepper|
|1 tbsp||(15 mL) Cornstarch|
|12||Hard taco shells|
|1 tbsp||(15 mL) Vegetable oil|
|2||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, diced|
|2||Cloves garlic, minced|
|1 cup||Chicken broth (or water)|
|1 tbsp||(15 mL) Lime juice|
|1 cup||(250 mL) Shredded lettuce|
|.5||Red onion, diced|
|1 cup||(250 mL) Grated Tex Mex cheese|
|Ready prepared Salsa|
COMBINE ingredients for taco seasoning and set aside.
HEAT taco shells according to package directions.
HEAT oil in a large skillet over medium-high. Add chicken and cook until golden brown, about 8-10 minutes. Add onions and garlic. Cook, stirring occasionally until onions are soft. Add taco seasoning mix and stir to coat chicken. Pour in chicken broth and lime juice. Bring to a boil, reduce heat and simmer for 2-3 minutes or until thickened.
ASSEMBLE tacos by spooning chicken mixture into prepared shells and topping with lettuce, tomatoes, red onion, cheese, sour cream and salsa.
