About this Recipe

Lean and tasty chicken tacos made with tender pieces of chicken breast and seasoned with homemade taco seasoning.

Ingredients

TACO SEASONING:
1 tbsp (15 mL) Smoked paprika
2 tsp (10 mL) Cumin
2 tsp (10 mL) Chili powder
1 tsp (5 mL) Oregano
.5 tsp (2 mL) Coriander
.25 tsp (1 mL) Cayenne
Salt and pepper
1 tbsp (15 mL) Cornstarch
TACOS:
12 Hard taco shells
1 tbsp (15 mL) Vegetable oil
2 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, diced
1 Onion, diced
2 Cloves garlic, minced
1 cup Chicken broth (or water)
1 tbsp (15 mL) Lime juice
1 cup (250 mL) Shredded lettuce
1 Tomato, diced
.5 Red onion, diced
1 cup (250 mL) Grated Tex Mex cheese
Sour Cream
Ready prepared Salsa

Directions

COMBINE ingredients for taco seasoning and set aside.

HEAT taco shells according to package directions.

HEAT oil in a large skillet over medium-high. Add chicken and cook until golden brown, about 8-10 minutes. Add onions and garlic. Cook, stirring occasionally until onions are soft. Add taco seasoning mix and stir to coat chicken. Pour in chicken broth and lime juice. Bring to a boil, reduce heat and simmer for 2-3 minutes or until thickened.

ASSEMBLE tacos by spooning chicken mixture into prepared shells and topping with lettuce, tomatoes, red onion, cheese, sour cream and salsa.
