This is a great menu item for dinner or for brunch. Roasting vegetables really brings out their natural sweetness. Here we’ve complimented those sweet roasted vegetables with a smoky sausage for a super tasty no fuss meal.
|2||Red onions, sliced|
|1||Green pepper, coarsely chopped|
|1||Red pepper, coarsely chopped|
|3||Large sweet potatoes, cut into bite-size pieces|
|4||Cloves garlic, minced|
|3 tbsp||(45 mL) Olive oil|
|Salt and pepper|
|1 Pkg||Grill'em sausages, sliced in half lengthwise|
PREHEAT oven to 375°F (190°C). Line a baking tray with parchment paper.
TOSS together red onions, peppers, sweet potatoes, garlic, olive oil, salt and pepper. Spread mixture onto prepared baking sheet. Roast in preheated oven, stirring occasionally, for 35-40 minutes or until potatoes are tender and golden.
PLACE sausage, cut side down, on a separate baking sheet. Add to oven halfway through vegetable cook time. Heat sausages until browned.
TOSS vegetables and sausage together and serve.
