|1 tsp||(5 mL) Olive oil|
|1 tbsp||(15 mL) Chopped shallots|
|2||Egg whites, beaten|
|Salt and pepper|
|1/2 tsp||(2 mL) Chopped fresh dill|
|1/2 tsp||(2 mL) Chopped capers (optional)|
|1/4 cup||(60 mL) Baby arugula or spinach (optional)|
|1-2 oz||(28-56 g) Smoked salmon|
|1||Slice of tomato|
|2||Slices Dempster’s WholeGrains® 12 Grain Bread, toasted|
HEAT oil in a small non-stick skillet over medium heat. Add shallots and sauté for 1-2 minutes. Pour in egg whites and cook, stirring for 1-2 minutes or until eggs are scrambled and just set. Stir in capers, dill, salt and pepper.
ASSEMBLE sandwich by placing spinach or arugula, if using, on one slice of toasted bread. Top with eggs, salmon, tomato, salt and pepper and the second slice of toasted bread.
Serve with orange wedges for added vitamin C.
