I love this slow cooked winter warmer which is more than a soup. My twist on a traditional Minestrone with the addition of Chicken and lots of fresh Herbs and Red Wine takes it to a new level. Great to plunge everything in to my slow cooker so that I can get on with my day . Packed with Vitamins Fibre and Protein and great for healthy eating and dieters. Freezes well.I cook my Maple Leaf Naturally Boneless Skinless Chicken Breasts as soon as I buy them and freeze them ready for later creations

Ingredients

2 Maple Leaf Prime Naturally Boneless Skinless Chicken Breasts
pre oven baked and Diced
6 cups of Chicken or Vegetable Stock
2 cups of Red Wine
1 can of Diced Tomatoes
1 can of Red beans
1 diced Onion
6 Garlic Cloves Crushed
1 cup small Pasta or Macaroni
2 Sliced zucchini
6 Medium Chopped Fresh Tomatoes
2 cups of Chopped mixed
Fresh herbs I used Thyme
Sage and Basil and Rosemary.
4 tbsp of Rich Tomato Paste

Directions

Really simple but nobody will realize when they eat it ! Just place all of the ingredients in the slow cooker and get on with your day. I cook mine on the high setting for 4 hours but you can cook on a the lower setting for 6 hours if that suits your plans even more!

Notes

I use a lot of Fresh herbs and would suggest Fresh is best for this recipe but dried would suffice .
