A cholesterol-reduced, protein boost, anytime omelette, ready in 15 minutes flat.


1/2 cup Schneiders® Olde Fashioned® Fat Free Smoked Ham
2 Eggs
3 Egg whites
1 tsp Olive oil
1/2 cup Red pepper
deseeded and finely chopped
1/2 cup Green pepper
deseeded and finely chopped
1/2 cup Reduced-fat mature cheddar
1/2 cup Onion
diced finely
1/2 cup Cooked rice (optional)


Mix the eggs and egg whites, add salt and pepper to taste and set aside.

Heat the oil in a medium skillet and cook the peppers for 3-4 mins. Throw in the onions and cook for 1 min more. Pour in the eggs, (cooked rice) and cook over a medium heat until almost completely set.

Sprinkle on the ham and cheese and continue cooking until just set in the centre.
