This very simple sausage, tomato and avocado salad is so easy to make and wonderful to serve to family or guests. It can serve as a satisfying one dish summer meal.
|1 Pkg||Schneider's Chicken Smoked Mild Italian Sausage (300g. - 4 sausages)|
|1.5 lbs||Ripe summer tomatoes|
|1||Small red onion|
|1||Large, ripe avocado|
|1 tbsp||Red balsamic vinegar|
|Fresh ground black pepper, to taste|
Boil the four sausages for 5 - 10 minutes.
While the sausages are boiling, prepare the avocado, removing the skin and pit. Slice the ripe flesh into bite sized pieces. Place in serving bowl.
Wash the tomatoes, dry and cut into bite sized pieces. Depending on the type of tomato used, this could be quarters, eights, or even sixteenths if using field tomatoes. Place the pieces into the serving bowl.
Peel the onion down to fresh layers and cut it into quarters. Thinly slice each quarter. Place the pieces into the serving bowl.
Drizzle about 1tablespoon of good quality red balsamic vinegar over the vegetables. Toss.
Remove the boiled sausages from the heat, drain the water, run cold water over them to cool them down a little.
On a cutting board, slice each sausage into about six pieces.
Place the sausage pieces into the salad, toss to ensure the sausage is covered with the dressing. Grind fresh black pepper to taste and serve.
