Lunch in a jiffy. A light and refreshing pea salad tossed with fresh basil and tender slices of chicken breast.
|2 cups||(500 mL) Frozen peas|
|3||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cooked and sliced|
|1||Red pepper, sliced|
|1/4 cup||(60 mL) Chopped fresh basil|
|1 tsp||(5 mL) Dijon|
|1 tsp||(5 mL) Grainy mustard|
|1/4 cup||(60 mL) White balsamic vinegar|
|2 tsp||(10 mL) Honey|
|3/4 cup||(175 mL) Olive oil|
|Salt and pepper|
PLACE peas in a large bowl and cover with hot water. Allow to sit 1-2 minutes until thawed and drain.
COMBINE chicken with peas, peppers and basil.
WHISK together dressing ingredients.
DRIZZLE pea and chicken salad with dressing and serve cold.
Substitute Maple Leaf Prime Naturally® Oven Roasted Chicken Breast Slices rather than cooking your own.
Serve with crusty bread or a cup of soup.
