This simple stir-fry is a popular street food in China. Food vendors bang the lids of their pots to attract attention and stir up business for their tasty offerings.
|2 tbsp||(30ml) Vegetable oil, divided|
|2||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cut into bite-size pieces|
|2 tsp||(10ml) Chinese five spice|
|2 cups||(500ml) Broccoli florets|
|3||Cloves garlic, minced|
|1 tbsp||(15ml) Freshly grated ginger|
|2-3||Green onions, sliced|
|1/2 cup||(125 mL) Chicken Broth|
|2 tbsp||(30 mL) Soy sauce|
|2 tbsp||(30 mL) Hoisin|
|1 tbsp||(15 mL) Chili garlic paste|
|3 tbsp||(45 mL) Almond or peanut butter|
|2 tbsp||(30 mL) Red wine vinegar|
HEAT 1 tbsp (15 mL) oil in a large skillet over medium-high. Add chicken and stir-fry for 5-6 minutes. Add Chinese 5 spice and continue to cook for 3-4 minutes or until golden brown. Remove from pan and set aside.
HEAT remaining oil in the same skillet. Add onions, carrots, broccoli, garlic and ginger. Cook for 5-7 minutes or until vegetables are tender crisp.
WHISK together remaining ingredients until combined. Add chicken back to the pan and pour in the broth mixture. Cook an additional 2 minutes or until heated through. Serve immediately.
Make your own Chinese 5 spice by combining equal parts of white pepper, ground cinnamon, ground star anise, ground fennel and ground clove.
