Moist and juicy pan seared chicken breasts sauced with spicy lemon and capers served over brown buttered green beans.


4 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts
1 Clove garlic, minced
1 tbsp (15 mL) Lemon juice
1 tsp (5 mL) Dijon
1 tbsp (15 mL) Honey
1 tbsp (15 mL) Red wine vinegar
1 Red chili pepper, minced
Salt and pepper
1 tbsp (15 mL) Olive oil
3 tbsp (45 mL) Butter, divided
2 Cloves garlic, minced
1 Red chili pepper, minced
1 tbsp (15 mL) Flour
.5 cup (125 mL) White wine
Zest and juice of 1 lemon
2 tbsp (30 mL) Capers, drained
.75 lb (350 g) Green beans


PLACE chicken in a large re-sealable plastic bag. Combine next 7 ingredients in a small bowl. Add to chicken and marinate in refrigerator for at least 30 minutes.

HEAT olive oil and 1 tbsp (15 mL) butter in a large skillet over medium-high heat. Add chicken and cook for about 5-7 minutes per side or until internal temperature reaches 165°F (74°C). Remove chicken and set aside.

ADD garlic, chili and flour to the pan. Cook 1-2 minutes. Slowly whisk in wine, lemon zest and juice. Scrape any browned bits from the bottom of the pan with a wooden spoon as this adds flavour. Bring to a boil and cook for 1 minute. Add capers and 1 tbsp (15 mL) butter. Add chicken and heat gently.

HEAT remaining 1 tbsp (15 mL) butter in a large skillet. Add green beans and sauté over medium heat until beans are fork tender and butter is brown and nutty. Season with salt and pepper.

SERVE beans on a platter topped with chicken and drizzled with sauce.


Garnish with lemon zest.
