Fresh shrimp and spicy green chilies change up the everyday quesadilla for something a little out of the ordinary.
|4||Dempster’s® Original Large Tortillas|
|2 cups||(500 mL) Shredded Tex Mex cheese|
|1 lb||(450 g) Small shrimp, cooked, peeled|
|1||(127 mL) Can chopped green chilies|
|3||Green onions, sliced|
|1-2 tbsp||(15-30 mL) Melted butter|
PLACE tortillas on a clean flat work surface. Sprinkle half the cheese on one half of each tortilla. Top with shrimp, chilies, tomatoes, green onions and remaining cheese.
FOLD tortillas in half and brush top with melted butter.
HEAT a large skillet over medium heat. Place 2 quesadillas, buttered side down, in the skillet and cook until golden brown, about 3-4 minutes. Brush top with butter and turn over. Cook 2-3 minutes until golden brown. Repeat with remaining quesadillas. Cut into wedges and serve.
Serve with your favourite toppings like guacamole, salsa and sour cream.
