About this Recipe

Dempster’s® crunchy fried corn tortillas wrapped around tender shredded chicken and classic Mexican flavours. Bet you can’t eat just one!

Ingredients

2 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cooked, shredded
1 1/2 cups (375 mL) Grated Pepper Jack cheese
2 cups (500 mL) Salsa, divided
1 tbsp (15 mL) Lime juice
1 tsp (5 mL) Cumin
1/2 tsp (2 mL) Chili powder
2 Cloves garlic, minced
1 cup (250 mL) Diced onion
Salt and pepper
16 Dempster’s® Corn Tortillas
4 cups Vegetable oil for deep frying
1 cup (250 mL) Sour cream
1 cup (250 mL) Prepared Guacamole, optional

Directions

HEAT oil to 375˚F (190˚C). (This step is mentioned later on as well.)

COMBINE chicken, cheese, 1 cup (250 mL) salsa, lime juice, cumin, chili powder, garlic, onion, salt and pepper in a large bowl.

SPOON about 2 tbsp (30 mL) of chicken mixture on lower third of each tortilla. Roll the tortilla as tightly as possible and secure with a toothpick. Repeat with remaining tortillas.

HEAT oil in a large deep pan to about 375°F (190°C). Fry tortillas 4 or 5 at a time. Do not overcrowd pan. Once tortillas float, fry an additional minute. Tortillas should be crisp. Drain on paper towel.

Serve with remaining salsa, sour cream and guacamole.

Notes

Serve over shredded lettuce.
