Dempster’s® crunchy fried corn tortillas wrapped around tender shredded chicken and classic Mexican flavours. Bet you can’t eat just one!
|2||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cooked, shredded|
|1 1/2 cups||(375 mL) Grated Pepper Jack cheese|
|2 cups||(500 mL) Salsa, divided|
|1 tbsp||(15 mL) Lime juice|
|1 tsp||(5 mL) Cumin|
|1/2 tsp||(2 mL) Chili powder|
|2||Cloves garlic, minced|
|1 cup||(250 mL) Diced onion|
|Salt and pepper|
|16||Dempster’s® Corn Tortillas|
|4 cups||Vegetable oil for deep frying|
|1 cup||(250 mL) Sour cream|
|1 cup||(250 mL) Prepared Guacamole, optional|
HEAT oil to 375˚F (190˚C). (This step is mentioned later on as well.)
COMBINE chicken, cheese, 1 cup (250 mL) salsa, lime juice, cumin, chili powder, garlic, onion, salt and pepper in a large bowl.
SPOON about 2 tbsp (30 mL) of chicken mixture on lower third of each tortilla. Roll the tortilla as tightly as possible and secure with a toothpick. Repeat with remaining tortillas.
HEAT oil in a large deep pan to about 375°F (190°C). Fry tortillas 4 or 5 at a time. Do not overcrowd pan. Once tortillas float, fry an additional minute. Tortillas should be crisp. Drain on paper towel.
Serve with remaining salsa, sour cream and guacamole.
Serve over shredded lettuce.
