This easy recipe is sure to become a lunchbox favourite in no time.

Ingredients

1 Pkg Maple Leaf® Natural Selections® Slow Roasted Shredded Chicken
5 mini pitas, cut in half
1/2 cup (125 mL) mayonnaise
1 tbsp (15 mL) lemon juice
1/4 cup (60 mL) red pepper, diced
1/4 cup (60 mL) celery, diced
2 tbsp (30 mL) green onion, chopped
1/2 cup (125 mL) chopped lettuce
Salt
Pepper

Directions

COMBINE chicken, mayonnaise, lemon juice, red pepper, celery and green onion in a large bowl.

STIR well to coat and season with salt and pepper.

DIVIDE and stuff lettuce into pita shell.

SPOON chicken salad into each. Enjoy.
