Layers of crisp lettuce, juicy shaved roast beef, slivers of red onion and ripe tomato slices smothered in a Blue Cheese horseradish mayo on a soft sandwich roll. The perfect lunch.

Ingredients

1 tsp (5 mL) Horseradish
.25 cup (60 mL) Mayonnaise
.25 cup (60 mL) Crumbled Blue cheese
.5 tsp (2 mL) Lemon juice
Salt and pepper
4 Soft sandwich rolls
4 Leaves lettuce
2 (175 g) Packages Natural Selections® Shaved Roasted Beef
.5 Small red onion, thinly sliced
2 Small tomatoes, sliced

Directions

COMBINE horseradish, mayonnaise, blue cheese, lemon juice, salt and pepper.

SPLIT sandwich rolls and spread the bottom half of each roll with blue cheese mixture. Layer lettuce, roast beef, red onion and tomatoes on top. Season with salt and pepper and top with remaining rolls.
