Delicious and healthy soy fajitas infused with the taste of Asia!
|2 tbsp||(30 mL) Vegetable oil, divided|
|1 lb||(454 g) Sirloin steak, sliced into ½” (1 cm) strips|
|Salt and pepper|
|2 tsp||(10 mL) Minced garlic, divided|
|1||Small red onion, sliced|
|3 cups||(750 mL) Broccoli florets|
|1/2 cup||(125 mL) Sliced carrots|
|1/2||Red pepper, sliced|
|1/4 cup||(60 mL) Soy sauce|
|1 tbsp||(15 mL) Rice vinegar|
|Pinch of chilli flakes|
|1/2 tsp||(2 mL) Sugar|
|2 tsp||(10 mL) Sesame oil, divided|
|2 tsp||(10 mL) Sesame seeds|

HEAT 1 tbsp (15 mL) of oil in a large non-stick skillet over medium-high heat. Season beef with salt and pepper. Add to skillet along with 1 tsp (5 mL) of garlic. Stir-fry for 5-6 minutes or until the meat is nicely browned. Remove from pan and set aside. Heat the remaining oil in the same pan, add onions, broccoli and carrots and stir-fry for 3-4 minutes. Add peppers and continue to cook until vegetables are fork tender; return beef to the pan.
COMBINE soy sauce, rice vinegar, chilli flakes, sugar, 1 tsp (5 mL) of sesame oil and the sesame seeds. Pour over the beef and vegetables and cook for 1-2 minutes or until slightly thickened.
ASSEMBLE by dividing the filling between the six tortillas. Drizzle with the remaining sesame oil.
Serve with sour cream, hoisin sauce and fresh cilantro.
