This is a tasty family recipe for the most perfect side to any meal.
|2||hard boiled eggs|
|1 tsp||dried parsley|
Boil 2 large potatoes until you can put a fork through (20 min).
When ready spill out hot water and replace with cold water and ice to chill the potatoes.
In the meantime also bring a pot of water to boil with 2 eggs. Once water is boiling, shut off heat and let stand for 16 min. Drain hot water and replace with cold water and ice to chill the eggs.
Once chilled, chop cooked potatoes into large chunks and place in bowl. Chop the eggs into small-medium sized pieces and place in bowl.
In a food processor finely dice 1 cup carrots and 3 large pickles add to bowl. Add mayonnaise, salt, pepper and paprika. Toss all ingredients together until fully mixed.
Chill in refrigerator and serve.
Garnish with parsley for added visual appeal
