This is a fantastic recipe I make time and time again. I usually eat it as breakfast or brunch but it can be enjoyed at any meal or time of day!
|2||Dempster's 100% Whole Wheat Tortillas|
|1/2 cup||baby arugula|
|1||green onion, sliced|
|Salt and Pepper to taste|
Prepare all ingredients.
In a skillet over medium heat, melt the butter. Crack the eggs into a separate bowl and whisk. Pour into hot skillet with butter, add salt and pepper. Cook while stirring for about 3-4 minutes, or until eggs are set.
Heat tortillas in microwave or oven.
Spread the hummus equally into the tortillas. Split the eggs into the 2 tortillas. Top with arugula, tomato, avocado and green onion. Wrap and enjoy!
This recipe can easily be doubled for 4 wraps.
The eggs in this wrap can also be substituted for 1/2 package firm tofu, crumbled. This makes it vegan friendly!
