Pickled herring is a popular delicacy served in Northern Europe along with potatoes, onions and sour cream. In this recipe we’ve wrapped it all up in a flour tortilla.
|6||Small new potatoes|
|1.5 cups||(375 mL) Drained pickled herring|
|1 cup||(250 mL) Mixed greens|
|3 tbsp||(45 mL) Minced red onion|
|2 tbsp||(30 mL) Chopped fresh dill|
|.25 cup||(60 mL) Sour cream|
|8||Dempster’s® Original Small Tortillas|
COOK potatoes in salted boiling water for 8-10 minutes or until fork tender. Drain and cut into quarters.
DIVIDE pickled herring, greens, red onion, dill and sour cream between tortillas and roll into a wrap. Secure with toothpicks.
