This is a very fast, easy,delicious handheld sandwich that is not only very tasty but very nutritious as well! Toppings can be customized for fussy little eaters as needed! These can also be enjoyed cold as well as hot which makes them very versatile for lunches on-the-go.


4 storebought Greek style pita bread rounds
1 bag baby spinach leaves
9 ounce
1 Pkg Maple Leaf Prime Extra Lean Ground Chicken
1 egg
1 tbsp seasoning salt
1/2 cup breadcrumbs
1 tsp dried oregano
1/2 tsp dried mint
2 garlic cloves
1/2 tsp lemon zest
pinch nutmeg
4 large romaine leaves
16 grape tomatoes
1 Pkg prepared Tzatziki sauce


In a sautee pan, wilt the spinach leaves. remove from heat and pat with paper towels to remove excess moisture. Add the next 8 ingredients to the spinach and combine. Form into 4 large patties. BBQ on medium heat or pan-fry until cooked through. (approximately 5 minutes per side).

Wrap the pita bread in paper towels and heat for a few seconds in the microwave. Cut the chicken patties in half and shingle down the middle of each pita. Top with lettuce, tomato and prepared tzatziki or whatever other toppings your crowd likes! Experiment with different vegetables and cheeses if desired!
