These luscious crepes will delight mom on Mother’s Day. Savoury and sweet meet to spoil mom on her special day.
|1 Pkg||375gr Schneiders® Country Naturals Bacon|
|8||12 inch prepared crepes|
|2 cups||(500mL) ricotta cheese|
|1 tbsp||(15mL) fresh thyme, chopped|
|4||large peaches, pitted and sliced|
|1/2 cup||(125mL) good quality honey|
HEAT a large skillet over medium high heat.
FRY bacon in batches 3 to 4 minutes per side or until desired crispness.
REMOVE onto Paper towel lined plate.
SET aside and keep warm.
PREHEAT grill to medium high heat.
GRILL peaches 1 to 2 minutes per side or until starting to softened slightly.
IN a large bowl combine ricotta, honey and thyme.
MICROWAVE crepes until just warm about 30 seconds.
DIVIDE ricotta mixture and spread onto crepes.
ROUGHLY chop bacon.
DIVIDE peaches followed by bacon onto crepes.
DRIZZLE with additional honey and thyme if desired.
Make it special and serve with champagne mimosas.
