It was necessary to name my recipe Save-My-Bacon! Steak, aka Redemption Steak. My first attempt at firing up the BBQ and grilling this season ended in disaster. I forgot to turn the BBQ down after igniting it and and placing prime T-Bones on the grill. I returned 7 minutes later to find the steaks done to a fine char. My family was not impressed.
To redeem myself, as a good griller, I had to pull out all the stops. That meant a bacon and caramelized onions steak topping. They have forgiven me.
|1/2 Pkg||Maple Leaf Bacon,|
|3 tbsp||Olive oil|
Remove stem ends from onions, and cut each onion in half, from stem to stem. Lay each half onion flat on a cutting board, and cut into wedges.
Coat the bottom of a wide frying pan with olive oil, or a mixture of olive oil and butter (about 1 teaspoon per onion). Heat the pan on medium high heat until the oil is shimmering. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally.
Depending on how hot your stovetop burner is you may need to reduce the heat to low to prevent the onions from burning. After 10 minutes, sprinkle some sugar to help with the caramelization process.
Let cook for 30 minutes to an hour, stirring every few minutes. As the onions cook down, stir more frequently until the onions are a rich, browned color.
Grill Bacon and Steaks:
Place a sheet of foil over grill, turning up the edges to form a foil pan. Heat BBQ to medium heat. Cook bacon, turning frequently, until golden brown. Remove bacon from grill.
Season steak with your favourite spices and grill to desired doneness. Remove steak from grill and top with caramelized onions and grilled bacon.
