4 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts
1 500g Maple Leaf® casings Meat
2 tbsp (30 mL) Vegetable oil, divided
Salt and pepper
1 Onion, thinly sliced
1/2 Red pepper, thinly sliced
1/2 Yellow pepper, thinly sliced


PREHEAT oven to 375°F (190°C).

SLICE a large pocket in the side of each chicken breast using a very sharp knife. Stuff each pocket with half a sausage. Heat 1 tbsp (15 mL) of oil in a large skillet. Season the chicken with salt and pepper and sear for 2 minutes per side or until golden brown. Transfer the chicken to a baking dish and bake for 15-20 minutes or until fully cooked and the internal temperature reaches 165°F (74°C).

MEANWHILE heat the remaining oil in the same skillet over medium. Add the onions and peppers. Season with salt and pepper and cook for 10-15 minutes stirring occasionally or until the onions have caramelized. Top each chicken breast with a heap of sautéed peppers and onions and serve hot.
