|1||500g Maple Leaf® casings Meat|
|2 tbsp||(30 mL) Vegetable oil, divided|
|Salt and pepper|
|1||Onion, thinly sliced|
|1/2||Red pepper, thinly sliced|
|1/2||Yellow pepper, thinly sliced|
PREHEAT oven to 375°F (190°C).
SLICE a large pocket in the side of each chicken breast using a very sharp knife. Stuff each pocket with half a sausage. Heat 1 tbsp (15 mL) of oil in a large skillet. Season the chicken with salt and pepper and sear for 2 minutes per side or until golden brown. Transfer the chicken to a baking dish and bake for 15-20 minutes or until fully cooked and the internal temperature reaches 165°F (74°C).
MEANWHILE heat the remaining oil in the same skillet over medium. Add the onions and peppers. Season with salt and pepper and cook for 10-15 minutes stirring occasionally or until the onions have caramelized. Top each chicken breast with a heap of sautéed peppers and onions and serve hot.
Serve with mashed sweet potatoes and a side salad.
