This is a simple, delicious meal with a beautiful presentation. As pleasing to look at as it is to eat!


3 Medium acorn squash
Salt and pepper
1 (500g) Maple Leaf® Sausage Meat
4 Stalks celery, finely diced
1 Medium onion, finely diced
2 Medium carrots, finely diced
1 cup (250 mL) Cooked white rice


PREHEAT oven to 350°F (180°C).

CUT squash in half and scoop out seeds and discard. Season with salt and pepper and place cut side down on a lightly greased baking sheet. Bake for about 45 minutes or until tender but not mushy. Remove from the oven and increase the oven temperature to 375°F (190°C).

REMOVE sausage from the casing. Cook in a large skillet over medium-high, breaking apart with a wooden spoon. Continue to cook until lightly browned, about 10 minutes. Add celery, onion and carrots; stir in cooked rice.

DIVIDE the sausage and rice mixture between the squash halves, filling the cavities heaping full.

PLACE in a 9x13” (3.5L) baking dish and bake in the preheated oven for 5-10 minutes or until completely heated through.

GARNISH with parsley or fresh herbs and serve.
