This tall breakfast sandwich uses sausage and eggs made into a frittata as the filling and sandwiched between a soft Dempster's hamburger bun. This is a great brunch meal to serve to a bunch.


6 Dempster's hamburger buns
1/2 lb sausage meat, casings removed
1 onion, diced
2 celery ribs, diced
1/2 orange bell pepper, diced
1/4 cup cilantro, chopped
2 cups spinach, chopped
6 eggs
1/2 cup milk
1/2 tsp black pepper


In a skillet, brown sausage meat and break into pieces. Drain fat leaving about a tablespoon of fat in the pan. Add onions, celery and bell pepper. Sauté for about 5 minutes. Add spinach and cilantro and stir until the greens have wilted. Place the ingredients into a pie plate.

In a bowl, whisk eggs, milk and black pepper until combined. Pour over the sausage mixture until combined. Bake in a 400 degree F. preheated oven for about 20 minutes until the eggs have set. Let cool slightly. Slice into 6-8 wedges and serve in a Dempster's hamburger bun.
