1 200g Maple Leaf® Sausage Meat
2 tbsp 30 mL) Panko bread crumbs
Salt and pepper
4 5-6 oz (140-170 g) Skinless cod or halibut fillets, cut 1 ½” (3.75 cm) thick
2 tbsp (30 mL) Olive oil


HEAT a large skillet over medium-high. Add sausage and cook for 8-10 minutes, breaking apart with the back of a wooden spoon. Transfer to a food processor along with breadcrumbs, salt and pepper. Pulse until combined. Place the mixture in a shallow pan.

PREHEAT oven to 400°F (200°C).

DIP each fillet into the crumb mixture, pressing to adhere the mixture to the top and sides of the fish. Arrange the fish in an oven proof baking dish crumb side up. Drizzle with olive oil.

ROAST fish for 12 minutes or until cooked through and no longer opaque. The fish should flake easily with a fork.

PREHEAT broiler and broil the fillets for 20-30 seconds or until light brown and crisp. Serve immediately.
