Mini grilled cheese sandwiches have become one of my favourite appetizers. These are great with sausage and peppers, and of course the spicy ketchup! These bite-sized treats use the famous Schneiders Grill'ems, known for their quality and artisan taste. The grated provolone cheese a must, though can be substituted for just about any kind of cheese (or better yet, add any kind of cheese).
|1 tbsp||(15 mL) Olive oil|
|1||Small red pepper, diced|
|1/2||Small onion, diced|
|3||Schneiders Grill'ems® original smoked Maple Leaf® Diced Original Chicken Sausage|
|1 cup||(250 mL) Grated Provolone cheese|
|3 tbsp||(45 mL) Softened butter|
|1/2||French baguette, thinly sliced|
|1/4 cup||(60 mL) Franks® Red Hot® Ketchup Style Hot Sauce|
HEAT oil in a medium skillet over medium-high. Add pepper, onion and sausage; sauté for 5-7 minutes or until the vegetables are tender. Set aside to cool slightly. When cooled add the grated cheese.
BUTTER one side of each slice of baguette. Assemble the sandwiches by adding a generous spoonful of filling to a slice of bread, butter side out, top with the second slice and grill in the skillet for 2-3 minutes per side or until the cheese is melted and the bread is golden. Serve with Franks® Red Hot® Ketchup Style Hot Sauce or spicy mustard for dipping.
