Nice and spicy, sausage and pepper burritos served with your favourite salsa and sour cream.


1 (500g) Package Schneiders® Country Naturals® Hot Sicilian Countryside Sausage, casings removed
1 Onion
2 Cloves garlic, minced
1 Red or yellow pepper, diced
1 cup (250 mL) Cooked Spanish style rice or Express Basmati Rice
1 (350 g) Package taco seasoning
1/4 cup (60 mL) Chopped cilantro (optional)
6 Large tortillas
1 (398 mL) Can ready prepared refried beans
1 1/2 cups (375 mL) Grated Cheddar or Monterey Jack cheese
Salsa and sour cream for serving


PREHEAT oven to 350°F (180°C).

HEAT a large skillet over medium-high. Add sausage and cook, breaking apart with the back of a wooden spoon for 8-10 minutes. Add onion, garlic and peppers; cook for 2-3 minutes or until softened. Stir in taco seasoning and rice. Cook for 1-2 minutes and remove from the heat. Stir in cilantro if using. Working one tortilla at a time, spread with 1/3 cup (80 mL) of refried beans leaving a 1” (2.5 cm) border. Place ¾ cup (175 mL) of the meat filling in the center of the tortilla, spreading slightly. Top ½ cup of grated cheese and roll tightly, tucking in the ends as you roll. Wrap tightly in aluminum foil and place directly on the rack of the preheated oven. Bake for 15-20 minutes. Remove from the oven and serve with salsa and sour cream.
