Start your morning off right with a delicious sausage and goat cheese omelet stuffed with red and green peppers.
|1 1/2 cups||(350 mL) (300g) Maple Leaf® Sausage Meat|
|1||Red pepper, chopped|
|.5||Green pepper, chopped|
|1||Small onion, chopped|
|1 tbsp||(15 mL) Milk|
|Salt and pepper|
|2 tbsp||(30 mL) Butter|
|.33 cup||(80 mL) Crumbled goat cheese|
HEAT a large pan over medium-high heat, add chopped sausage and cook for 5 to 7 minutes. Add peppers and onion; continue to cook for another 5 minutes, or until peppers and onions are soft and sausage filling has reached an internal temperature at 165°F (74°C). Remove from pan and set aside.
WHISK together eggs and milk, season with salt and pepper, set aside.
HEAT 1 tbsp (15 mL) butter in a small frypan over medium heat, add half the egg mixture and cook for 3-5 minutes, or until egg is set. Add half sausage and pepper mixture to one side of omelet, top with half the goat’s cheese. Fold egg over to form an omelet. Remove from pan and repeat with remaining ingredients.
Serve with Maple Leaf Bacon.
