This simple Sausage and Bacon Hash is perfect for breakfast or brunch! Try serving it with your favourite style eggs and toast.


20 ml Vegetable oil, divided
375 ml Hash brown potatoes
1 Small onion, finely chopped
1 Clove garlic, crushed
6 MAPLE LEAF® Fully Cooked Sausage Links, cut into ½-inch (1cm) rounds
7 Slices MAPLE LEAF® Ready Crisp® Bacon, cut into 1/2-inch (1 cm) dice
30 ml Green onions, finely sliced
1 Red pepper, coarsely chopped
125 ml Grated cheddar cheese
Salt and pepper to taste
Coarsely chopped parsley


HEAT 2 tsp (10 mL) oil in a large non-stick skillet over medium heat; add hash brown potatoes and cook for 8 to 10 minutes, stirring occasionally. HEAT remaining 2 tsp (10 mL) oil in a second non-stick skillet over medium heat; add onion and cook until softened; add garlic, sausage, bacon, green onion and red pepper; cook for 2 to 3 minutes. COMBINE sausage mixture and cheese with potatoes. Season to taste and serve with parsley.
