This simple Sausage and Bacon Hash is perfect for breakfast or brunch! Try serving it with your favourite style eggs and toast.
|20 ml||Vegetable oil, divided|
|375 ml||Hash brown potatoes|
|1||Small onion, finely chopped|
|1||Clove garlic, crushed|
|6||MAPLE LEAF® Fully Cooked Sausage Links, cut into ½-inch (1cm) rounds|
|7||Slices MAPLE LEAF® Ready Crisp® Bacon, cut into 1/2-inch (1 cm) dice|
|30 ml||Green onions, finely sliced|
|1||Red pepper, coarsely chopped|
|125 ml||Grated cheddar cheese|
|Salt and pepper to taste|
|Coarsely chopped parsley|
HEAT 2 tsp (10 mL) oil in a large non-stick skillet over medium heat; add hash brown potatoes and cook for 8 to 10 minutes, stirring occasionally. HEAT remaining 2 tsp (10 mL) oil in a second non-stick skillet over medium heat; add onion and cook until softened; add garlic, sausage, bacon, green onion and red pepper; cook for 2 to 3 minutes. COMBINE sausage mixture and cheese with potatoes. Season to taste and serve with parsley.
