This gorgeous soup is restaurant style. Easy and delicious for a quick week night meal.
|4||Schneiders® Grill’ems sausages, sliced into ½ inch pieces|
|2 tbsp||(30 mL) olive oil|
|1||small onion, small dice|
|2 cups||(500 mL) kale, trimmed, cleaned and roughly chopped|
|5 cups||(1250 mL) good quality vegetable stock|
|2 cups||(500 mL) cheese tortellini, cooked|
HEAT olive oil in a large pot.
COOK onion and sausage for about 4 to 5 minutes.
ADD vegetable stock and bay leaf and bring to a simmer.
ADD kale and season with salt and pepper.
SIMMER for 5 to 6 minutes longer.
ADD tortellini and allow to heat through, about 5 minutes longer.
Serve with fresh bread and a small green salad.
