This gorgeous soup is restaurant style. Easy and delicious for a quick week night meal.
4 | Schneiders® Grill’ems sausages, sliced into ½ inch pieces |
2 tbsp | (30 mL) olive oil |
1 | small onion, small dice |
2 cups | (500 mL) kale, trimmed, cleaned and roughly chopped |
5 cups | (1250 mL) good quality vegetable stock |
2 cups | (500 mL) cheese tortellini, cooked |
1 | bay leaf |
Salt | |
Pepper |
HEAT olive oil in a large pot.
COOK onion and sausage for about 4 to 5 minutes.
ADD vegetable stock and bay leaf and bring to a simmer.
ADD kale and season with salt and pepper.
SIMMER for 5 to 6 minutes longer.
ADD tortellini and allow to heat through, about 5 minutes longer.
SERVE.
Serve with fresh bread and a small green salad.
