Sausage, Kale and Tortellini Brodo

About this Recipe

This gorgeous soup is restaurant style. Easy and delicious for a quick week night meal.

Ingredients

4 Schneiders® Grill’ems sausages, sliced into ½ inch pieces
2 tbsp (30 mL) olive oil
1 small onion, small dice
2 cups (500 mL) kale, trimmed, cleaned and roughly chopped
5 cups (1250 mL) good quality vegetable stock
2 cups (500 mL) cheese tortellini, cooked
1 bay leaf
Salt
Pepper

Directions

HEAT olive oil in a large pot.

COOK onion and sausage for about 4 to 5 minutes.

ADD vegetable stock and bay leaf and bring to a simmer.

ADD kale and season with salt and pepper.

SIMMER for 5 to 6 minutes longer.

ADD tortellini and allow to heat through, about 5 minutes longer.

SERVE.

Notes

Serve with fresh bread and a small green salad.
