This is a delicious gluten free treat that is easy to make and healthy!
|3||Schneiders Mild Italian Smoked Chicken Sausages|
|3 cups||Marinara Sauce|
|3/4 cups||Goat Cheese, crumbled|
|non stick cooking spray|
Preheat oven to 350.
Spray a 9X13 pan with non-stick cooking spray.
Slice eggplant and sausage to about 1/4" thick slices.
Layer 1/3 of the eggplant covering the bottom of the pan.
Top with 1 cup of Marinara, followed by 1/4 cup of crumbled goat cheese, and 1 sausage sliced. Repeat two more times, ending with goat cheese and then sausage.
Bake for 45min or until bubbling and cheese turns very slightly brown.
