1 Pkg Maple Leaf Prime Naturally® Chicken Thighs
1/3 cup (80 mL) Olive oil, divided
1 Lemon, juiced
1 Clove garlic, minced
Salt and pepper
2 Green Peppers, cut into chunks
1 Red pepper, sliced
1 Onion, sliced
12 New potatoes, halved
1 (500g) Maple Leaf® Sausage Meat
1 tbsp (15 mL) Italian seasoning


PREHEAT oven to 375˚F (190˚C).

TOSS chicken thighs in ¼ cup (60 mL) olive oil, lemon juice, garlic, salt and pepper in a small bowl and set aside.

TOSS vegetables in remaining olive oil and spread into a 9” X 13” (3.5 L) rectangle baking pan. Arrange chicken thighs and sausage on top. Season with salt, pepper and Italian seasoning. Bake in preheated oven for 25 minutes. Turn sausage over and continue baking for 25 minutes.
