A perfect light summer recipe that goes well with home-made mango chutney and Guacamole. Should you have any leftovers, this Sante Fe Chicken goes well stuffed in a corn tortilla!


4 Boneless Prime Chicken Breasts
1/3 cup Lime Juice
1/4 cup Soy Sauce
2 tbsp Olive Oil
2 tsp Chili Powder
2 tsp Cumin Powder
2 tsp Ground Coriander
1 tbsp Honey


1. Place the chicken in a shallow glass dish
2. In a small bowl, mix all ingredients
3. Pour over the chicken, turning to coat with marinade
4. Cover and chill overnight
5. Remove chicken from marinade; discard marinade
6. Place chicken on grill over medium heat; cover grill and cook 20 minutes, turning once, until the juice of the chicken is clear
