Santa Fe Chicken Tostadas with Fresh Salsa

About this Recipe

Traditional Santa Fe Chicken Tostadas topped with green onions, jalapeno slices, romaine lettuce and sour cream. Garnish with homemade cherry tomato salsa to serve!

Ingredients

4 Prepared tostadas
1 cup (250 mL) Refried beans
1 Package Maple Leaf Prime® Marinated Santa Fe Chicken Breasts, cooked, shredded
1 cup (250 mL) Tex Mex cheese
2 Green onions, thinly sliced
1 Jalapeno, thinly sliced
Shredded leaf lettuce
.25 cup (60 mL) Sour cream
FRESH SALSA:
1 cup (250 mL) Diced cherry tomatoes
1 tbsp (15 mL) Finely diced red onion
1 Jalapeno, seeded, minced
1 tbsp to 2, (15-30 mL) Chopped fresh cilantro
1 tsp (5 mL) Lime juice
.5 tsp (2 mL) Cumin
Dash hot sauce
Salt and pepper

Directions

PREHEAT oven to 375°F (190°C).

SPREAD ¼ cup (60 mL) of refried beans over each tostada. Mix shredded chicken and cheese together in a small bowl and divide between the tostadas. Place on a baking sheet.

BAKE in preheated oven for 5-10 minutes or until the cheese is melted.

MEANWHILE combine all salsa ingredients in a bowl. Top each baked tostada with green onions, jalapeno slices, lettuce and sour cream. Garnish with fresh salsa and serve extra on the side.
