Great as a side to the chicken, but also great topped with the chicken.
|2||Maple Leaf Prime Naturally Portions Santa Fe Style Chicken Breast|
|1/4||green bell pepper|
|1/4||red bell pepper|
|2 cup||chopped romaine lettuce|
|1/2 tsp||minced garlic|
|salt and pepper|
|2 tbsp||chopped cilantro|
Grilled chicken for 5-8 mins per side until cooked through. Let rest for 5 minutes after grilling.
While chicken is cooking, slice onion into thin strips, and roughly chop the red and green bell peppers.
In a salad bowl, mix together salsa, mayo, garlic.
Toss together the salsa dressing, onion, bell peppers, cilantro and romaine lettuce.
Squeeze juice from the lemon onto the salad, and season with salt and pepper. Serve as a side salad to the chicken, or you can chop the chicken and top the salad with it as well. Enjoy!
You can control the heat of the salad by the level of spiciness of the salsa
