Easy as pie, using Maple Leaf Prime marinated Santa Fe chicken breasts. Tasty, colourful, full of flavour. What a great Summer dish for any night of the week or a showstopping meal for guests


4 Maple Leaf Prime Santa Fe Marinated chicken breasts
4 tbsp BBQ sauce (your fave)
1 cup quinoa, rinsed
1 1/2 cup low sodium chicken broth
1/2 cup each, diced mango, cucumber, avacodo
1/4 cup each, diced cucumber, red bell pepper, tomato, black olives
3 tbsp each minced chives and cilantro
4 tbsp EVOO
2 tbsp white balsamic vinegar
1/2 tsp salt
2 cup spinach, chiffonade


Preheat BBQ grill or grill pan to 300F Cook chicken on both sides until juices run clear approx. 25min. Baste with BBQ sauce while cooking.

Meanwhile bring broth to a boil. Pour in quinoa and recduce heat to med. low, cook until tender to the bite approx. 15-20min. Set aside to cool

Toss quinoa with vegetables and fruit. Pour oil, vinegar, herbs, salt over mixture and toss to coat. Serve with chicken.
Top with cut spinach.
