Easy as pie, using Maple Leaf Prime marinated Santa Fe chicken breasts. Tasty, colourful, full of flavour. What a great Summer dish for any night of the week or a showstopping meal for guests
|4||Maple Leaf Prime Santa Fe Marinated chicken breasts|
|4 tbsp||BBQ sauce (your fave)|
|1 cup||quinoa, rinsed|
|1 1/2 cup||low sodium chicken broth|
|1/2 cup||each, diced mango, cucumber, avacodo|
|1/4 cup||each, diced cucumber, red bell pepper, tomato, black olives|
|3 tbsp||each minced chives and cilantro|
|2 tbsp||white balsamic vinegar|
|2 cup||spinach, chiffonade|
Preheat BBQ grill or grill pan to 300F Cook chicken on both sides until juices run clear approx. 25min. Baste with BBQ sauce while cooking.
Meanwhile bring broth to a boil. Pour in quinoa and recduce heat to med. low, cook until tender to the bite approx. 15-20min. Set aside to cool
Toss quinoa with vegetables and fruit. Pour oil, vinegar, herbs, salt over mixture and toss to coat. Serve with chicken.
Top with cut spinach.
