Southwestern tangy flavours surround this colourful full of flavor "meatloaf". Low in fat, moist and tender. This dish will become a favourite for mid week after school meals...Double this so you can pop one into the freezer and pull it out for quick meals. Leftovers are great for lunch!


2 lbs Extra Lean Prime Ground Chicken or Turkey
1/3 of a diced red pepper
1/2 cup chopped parsley
1 grated carrot
1 cup salsa (mild or hot)
1 lg. egg
1/2 cup breadcrumbs
1 tsp sea salt or salt seasoning
1 green onion, chopped
1 yellow onion, peeled and diced
1/4 cup to 1/2 cup your fave BBQ Sauce


In a large bowl mix all of the ingredients except the BBQ Sauce. Pack tightly into an ungreased loaf pan.
Spread BBQ Sauce over loaf.
Cover with foil. Bake in a preheated 350F oven for 1 hr. Then uncover and continue baking for another 1/2hr. to colour.
