Southwestern tangy flavours surround this colourful full of flavor "meatloaf". Low in fat, moist and tender. This dish will become a favourite for mid week after school meals...Double this so you can pop one into the freezer and pull it out for quick meals. Leftovers are great for lunch!
|2 lbs||Extra Lean Prime Ground Chicken or Turkey|
|1/3||of a diced red pepper|
|1/2 cup||chopped parsley|
|1 cup||salsa (mild or hot)|
|1 tsp||sea salt or salt seasoning|
|1||green onion, chopped|
|1||yellow onion, peeled and diced|
|1/4 cup||to 1/2 cup your fave BBQ Sauce|
In a large bowl mix all of the ingredients except the BBQ Sauce. Pack tightly into an ungreased loaf pan.
Spread BBQ Sauce over loaf.
Cover with foil. Bake in a preheated 350F oven for 1 hr. Then uncover and continue baking for another 1/2hr. to colour.
