This recipe uses pink salmon. Makes 2 sandwiches.
|213 g||can pink salmon, drained|
|1 tsp||barbecue sauce|
|1/4 cup||green relish|
|4||slices Dempster's WholeGrains bread|
|1/4 tsp||freshly chopped Thyme|
|2 tbsp||freshly chopped green onion|
|4||thin slices of tomato (optional)|
|2||lettuce leaves (optional)|
|fresh ground pepper to taste|
Drain and mash salmon. Add mayo, relish, barbecue sauce, Thyme, green onion and pepper and mix thoroughly.
For each sandwich spread half the salmon mixture evenly on one slice of bread. Layer on tomato and lettuce if using. Top with a second slice of bread. Slice in two or four and serve.
Using smokey barbecue sauce gives a smoked salmon taste.
For a low fat version use up to a half cup of green relish and skip the mayo.
