This Sacchettini Salad is perfect for a picnic! Combine a variety of colourful vegetables with Olivieri® Basil Pesto to create a fresh summer salad your whole family will love!
50 ml | Olive oil, divided |
2 | Yellow peppers, julienne |
2 | Red peppers, julienne |
2 | Medium carrots, julienne |
600 g | Package OLIVIERI® Chicken, Bacon & Cheese Sacchettini |
60 ml | OLIVIERI® Basil Pesto |
250 ml | Green or black olives, halved |
Each black pepper and salt | |
Freshly grated parmesan |
HEAT 1 tbsp (15 mL) oil in a large skillet over medium-high heat. Sauté peppers and carrots for 2-3 minutes or until tender crisp. Meanwhile, cook pasta in a large pot of boiling salted water for 3 minutes. Drain and rinse with cold water. TOSS drained pasta in a large bowl with remaining ingredients. SPRINKLE with parmesan before serving.
