This simple to prepare chicken dish mimics a Rueben sandwich in flavours. Tangy sauerkraut, melted Swiss cheese and a creamy thousand island sauce.
|4||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts|
|Salt and pepper|
|1 1/2 cups||(375 mL) Sauerkraut, drained|
|4||Slices Swiss cheese|
|1 cup||(250 mL) Thousand island salad dressing|
|1 tbsp||(15 mL) Chopped fresh parsley|
PREHEAT oven to 350˚F (180˚C). Lightly coat a 9” X 13” (3.5 L) baking pan with non stick cooking spray.
PLACE chicken breasts in prepared pan and season with salt and pepper. Top each breast evenly with sauerkraut and cheese slices. Pour salad dressing over chicken and cover with aluminum foil.
BAKE in preheated oven for 45-60 minutes or until the internal temperature of the chicken has reached 165˚F (74˚C).
