Everyone loves rotisserie chicken, but not everyone has the grill for it. This chicken is rotisserie style, just as juicy, done in the oven!


1 Maple Leaf Prime Naturally® Whole Chicken, 2-3 lbs
2 tsp paprika
2 tsp brown sugar
2 tsp dry mustard
1 1/2 tsp sea salt
1/2 tsp chipotle chili pepper
1/3 tsp black pepper
2 tbsp butter


Rinse and pat the chicken dry.
Mix all ingredients but butter and chicken. Rub the washed and dried chicken with the mix, inside and out.
Place in a resealable bag and refrigerate overnight.
Marinate overnight if possible.
Prior cooking, let the chicken sit at room temperature for 1 hour.
Preheat the oven to 400F.
Slide the butter under the chicken breast’s skin. Twine.
Roast the chicken uncovered on its side for 30 min. Baste with the juices or water.
With tongs inserted into the cavity, rotate on its other side for another 30 min.
Baste with the juices or water.
Rotate to its back for 20 min.
Baste with the juices or water.
Then to its front for 20 min.
Let rest for 10 min on its breast before carving.
