Super fresh and full of antioxidants and protein. This salad says summer and your tummy will say thank you!


1 cup (250 mL) left over Maple Leaf Prime® Rotisserie Style Chicken, sliced or chopped
2 cups (500 mL) baby spinach
1 cup (250 mL) purple kale, chopped
1/2 cup (125 mL) blueberries
1/2 cup (125 mL) strawberries, sliced
1 small tangerine
2 tbsp (30 mL) pine nuts, toasted
Juice 1 lemon
2 tbsp (30 mL) Dijon
1 tbsp (15 mL) maple syrup
1 tbsp (15 mL) apple cider vinegar
1/4 cup (60 mL) olive oil


IN a small bowl whisk lemon juice, cider vinegar,

DIJON, and maple syrup together.

DRIZZLE in olive oil. Whisk well to incorporate.

SEASON with salt and pepper.

IN a large bowl toss greens, berries and tangerine with dressing.

DIVIDE dressed salad into to salad bowls.

DIVIDE and top with chicken.

GARNISH with pine nuts.


Serve with grilled rosemary ciabatta bread.
