|8||Maple Leaf Prime Naturally® boneless, skinless chicken thighs|
|4||Medium red skinned potatoes, cut into 1-inch (2.5 cm) pieces|
|30 ml||Olive oil|
|15 ml||Chopped fresh rosemary or 1 tsp (5 mL) dried rosemary|
|500 ml||Onion, mushrooms, red peppers, cut into 1-inch (2.5 cm) pieces|
|Salt and pepper to taste|
PREHEAT oven to 400°F (200°C).
COMBINE chicken, potatoes, olive oil, rosemary, garlic, cayenne, onion, mushrooms, red peppers, salt and pepper. Spread in a single layer on a large baking sheet lined with either foil or parchment paper.
BAKE uncovered for 20 minutes. Turn chicken and continue to bake for another 15-20 minutes or until chicken has reached an internal temperature of 170°F (77°C) and potatoes are tender.
