Quick and healthy summer meal with minimal cooking.


1 cup grated cumcumber, drained
1 cup chopped tomato, drained
1 cup Maple Leaf Prime's® Fresh Chicken breasts, cooked and sliced
1/2 tsp fresh Rosemary, chopped
1/2 tsp fresh Thyme, chopped
2 slices Dempster's Whole Grain bread, toasted
3 tbsp cream cheese
2 tbsp Coleslaw dressing
1 cup canned 6-bean mixture, drained
fresh ground pepper


Toast bread and spread each slice with 1-1/2 tbsp of cream cheese. Cut into "soldiers".

In a large bowl lightly toss (do not over mix) beans cucumber, tomato, Rosemary and Thyme. Place half mixture on each of two plates and add 1 tbsp of dressing. Add a little fresh ground pepper. Add a layer of 1/2 cup of prepared chicken. Serve with cream cheese soldiers.
