Quick and healthy summer meal with minimal cooking.
|1 cup||grated cumcumber, drained|
|1 cup||chopped tomato, drained|
|1 cup||Maple Leaf Prime's® Fresh Chicken breasts, cooked and sliced|
|1/2 tsp||fresh Rosemary, chopped|
|1/2 tsp||fresh Thyme, chopped|
|2||slices Dempster's Whole Grain bread, toasted|
|3 tbsp||cream cheese|
|2 tbsp||Coleslaw dressing|
|1 cup||canned 6-bean mixture, drained|
|fresh ground pepper|
Toast bread and spread each slice with 1-1/2 tbsp of cream cheese. Cut into "soldiers".
In a large bowl lightly toss (do not over mix) beans cucumber, tomato, Rosemary and Thyme. Place half mixture on each of two plates and add 1 tbsp of dressing. Add a little fresh ground pepper. Add a layer of 1/2 cup of prepared chicken. Serve with cream cheese soldiers.
