About this Recipe

My mother used to make these sandwiches which she called Rose Gardens. Now while they are pretty, I think it was just her clever way to get me to eat more vegetables. They are moist and tasty by any name.


4 Dempster's WholeGrains bread slices
2 Radishes
12 Cucumber slices
1/2 cup Baby spinach
1 tbsp mayonnaise or pesto


Spread mayonnaise or pesto on two slices of bread. Cover with a layer of baby spinach or lettuce.

Score cucumber with a fork. Slice cucumber and radishes into thin pieces. On other two pieces of bread, layer cucumber slices and top with radish slices. Put the bread slices together to make the sandwich.
