This is a delicious way to serve ribs. The meat becomes very savoury and tender. Serve with your favourite vegetables roasted in the oven; it’s easier than you think and impressive to serve.

|Salt and pepper|
|1 cup||(250 mL) Butter|
|2||Stalks celery, diced|
|1||Apple, peeled and diced|
|1 tsp||(5 mL) Ground sage|
|8||Slices white bread, cut into 1” (2.5 cm) cubes|
|1/2 cup||Slices white bread, cut into 1” (2.5 cm) cubes|
PREHEAT oven to 325°F (170°C).
REMOVE the membrane from the back of the ribs by gently tearing it off. Season the ribs with salt and pepper.
HEAT butter in a large skillet over medium. Add onion, celery, apple and sage. Sauté until softened. Add bread cubes and stir in the broth. Season with salt and pepper to taste and cool slightly.
PLACE half the stuffing on the meaty side of each rack of ribs. Roll, bone side out to enclose the stuffing and secure with kitchen string. Place the rolled ribs upright in a large roaster. Cover and roast in the preheated oven for 2 ½ hours or until the meat is very tender.
Serve with roasted vegetables.
