A robustly flavorful soup, absolutely delicious! Take the time to make this homemade soup, your taste-buds will thank you!
|12||12 Tomatoes, chopped into quarters|
|3||3 Orange/Red Peppers, seeded and chopped into quarters|
|1||Head of Garlic, cloves separated and pealed|
|3 tsp||Italian seasoning|
|2.5 cups||Chicken Broth|
|2 cups||Tomato-vegetable juice|
|10||leaves fresh basil, chopped|
|Salt and pepper to taste|
|J.M.Schneiders Chicken Smoked Sausages, sliced|
|1 cup||Orzo, dry|
- Preheat oven to 425
- Line 2 baking sheets with parchment paper, spread chopped tomatoes, peppers, and onions evenly over baking sheets. Using a garlic press, squeeze garlic evenly over chopped veggies and sprinkle with Italian seasoning. Drizzle with olive oil. Bake for 20 minutes. Flip all veggies so skin side is facing up, and broil for an additional 5 minutes. Remove from oven and let cool
- Once veggies are cool to touch, discard skins. Set aside half to chop-up for chunkies in soup. Place other half in blender; puree.
- Pour puree into pot; add chicken broth, tomato-vegetable juice, fresh basil, salt and pepper. Add reserved chopped veggies and sliced Chicken Smoked Sausage. Bring to simmer for 5 minutes.
- Cook Orzo. Drain. Combine with soup. Serve!
