It is simple, sweet and savoury. It is a filling side dish, perfect side for beef and red wine sauce.
|1 cup||red lentils|
|2 cup||sweet potato cubed|
|1 cup||red pepper chopped|
|1 tsp||hot sauce|
|2 tbsp||olive oil|
|1/2 cup||Beef stock|
Roast sweet potatoes in olive oil in the oven for 20-25 minutes at 350 degrees, turning once.
In the meantime, in a sauce pan, saute red pepper in olive oil until slightly softened.
Mix in everything else and let simmer for 15 minutes.
Add in the sweet potatoes when they're done.
