A fabulous side dish. Root vegetables are very hearty and taste great when roasted. They are a great accompaniment with any of Maple Leaf's Prime Naturally stuffed chicken breasts.
|2 tbsp||parsley chopped|
|2 tbsp||extra virgin olive oil|
|1 tsp||balsamic vinegar|
|2 tsp||fresh rosemary|
|1/2 tsp||ground pepper|
Peel and chop all root vegetables. Chop parsley and rosemary. Toss everything in a large bowl and add olive oil, vinegar and salt and pepper. Mix to coat. Roast in a oven at 400f for 1 hour or until golden and cooked through. After the first 30 minutes, remove from oven and turn all vegetables.
