A very easy recipe that is always a hit at our house. I can prep this in 5 minutes, then just let it cook.
|4||Maple Leaf Prime Chicken Breasts (with bone and skin)|
|2 tbsp||olive oil|
|1 tsp||coarse cracked sea salt|
|8 tbsp||goat cheese|
|8 tbsp||fresh chopped Italian parsly|
Preheat oven to 350°.
Place chicken breasts on baking pan, rub each breast with 1/2 tbsp olive oil and sprinkle with 1/4 tsp of salt.
Bake for 45 minutes or until cooked through.
Remove from oven (optional:may remove skin at this point), place 2 tbsp goat cheese on each breast and return to oven for 5 minutes to warm cheese.
Remove from oven, top each Breast with 2 tbsp fresh chopped parsley.
Serve with salad or fresh sliced cucumbers.
A drizzle of good quality olive olive over the top is a nice addition.
